Dr Zoi Konsoula is a Lecturer of Chemistry at the University of Nicosia. She studied at the Aristotle University of Thessaloniki, Greece (BSc (Honors) Chemical Engineering-2000, PhD Applied Biochemistry/Biotechnology-2005), while her postdoctoral fellowship focused on Food Chemistry/Technology (Laboratory of Organic Chemistry, Section of Chemistry, Department of Chemical Engineering, Aristotle University of Thessaloniki). Furthermore, Dr Konsoula holds a Postgraduate Certificate (PgCert) in Continuing Professional Academic Development in Learning and Teaching in Higher Education (University of Hertfordshire, UK-2012). Her doctoral degree studies were funded by scholarships from the National Scholarships Institution of Greece (2001-2005) and the A.G. LEVENTIS FOUNDATION (2001-2002), whilst she received an award of distinction for the work as a PhD candidate by the Research Committee of Aristotle University of Thessaloniki (2002-2003). Moreover, Dr Konsoula has received awards of distinction for undergraduate students by the Technical Chamber of Hellas (1996-1997, 1997-1998, 1999-2000) as well as scholarships for distinguished undergraduate students by the National Scholarships Institution (1996-1997, 1997-1998).

Dr Konsoula has been teaching General, Physical, Inorganic, Organic and Food Chemistry as well as Food Technology at the Department of Life & Health Sciences since the fall of 2010. Furthermore, she has been supervising students undertaking their 4th-year Research Project as well as a PhD candidate. Additionally, Dr Konsoula serves as a Chemistry lab instructor in the frame of the ERASMUS+ project entitled “VET Learners and Staff Mobilities”. Prior to her relocation in Cyprus, she was a part-time lecturer of Chemistry/Biochemistry at the D.E.I. College Bachelor & Master Degrees, Thessaloniki Greece (2009 – 2010), the Department of Food Technology, School of Food Technology and Nutrition, Technological Educational Institute of Thessaloniki (2007 – 2009) and the Institute of Vocational Training of Triandria Thessaloniki (2006).

Dr Konsoula serves as a reviewer for various scientific journals. Additionally, she is a fellow of the Higher Education Academy as well as a member of the Panhellenic Association of Chemical Engineers and the Technical Chamber of Hellas, while she is registered at the Official Record of College Lecturers of the Greek Ministry of Education, Lifelong Learning and Religious Affairs / Education. Finally, in the past, Dr Konsoula has served as coordinator of the Pre-Medical Programme (2010-2013) of Intercollege Nicosia, (the associate institution, complementing the University’s study offerings), president of the Faculty Body of Intercollege Nicosia (2012-2014) and official representative to the College’s council (2012-2014).

Dr Konsoula has participated in various research projects. Her research interests include Biotechnology, Microbial technology, Enzyme technology, Food biotechnology, Food science, Food technology, Phytochemistry and Environmental chemistry. Lately, her research has largely been concerned with the isolation of phytochemicals from various substrates, the study of their properties and their subsequent application in medicine or food technology. As a result, she has established collaborations with various universities, research institutions and the industry and she has been an invited speaker to various international conferences.
